Escalopes de courgettes

Escalopes de courgettes are thin slices of zucchini, breaded and pan-fried until golden and crispy, similar to traditional meat escalopes. They make a delicious vegetarian main dish or a side. Here's how to prepare them:

Ingredients:

  • 2 large courgettes (zucchinis)
  • 1 cup breadcrumbs (preferably panko for extra crunch)
  • 1/2 cup grated Parmesan cheese (optional)
  • 1/2 cup all-purpose flour
  • 2 eggs
  • 2 tbsp milk
  • 1 tsp dried Italian herbs (oregano, basil, or thyme)
  • Salt and pepper to taste
  • Olive oil for frying
  • Lemon wedges and fresh parsley for serving

Instructions:

  1. Prepare the Courgettes:

    • Wash the courgettes and cut off the ends.
    • Slice the courgettes lengthwise into thin slices, about 1/4 inch (0.5 cm) thick. You can use a sharp knife or a mandoline for even slices.
    • Lightly season the slices with salt and let them sit for about 10 minutes. This will help draw out excess moisture. Pat them dry with a paper towel before proceeding.
  2. Set Up the Breading Station:

    • In one shallow dish, place the flour.
    • In a second dish, beat the eggs with the milk.
    • In a third dish, combine the breadcrumbs, grated Parmesan cheese (if using), dried herbs, and a bit of salt and pepper.
  3. Bread the Courgettes:

    • Dredge each courgette slice first in the flour, shaking off any excess.
    • Dip the floured slice into the egg mixture, ensuring it’s well-coated.
    • Finally, press the slice into the breadcrumb mixture, coating it thoroughly on both sides.
  4. Fry the Escalopes:

    • Heat a generous amount of olive oil in a large skillet over medium heat.
    • Once the oil is hot, add the breaded courgette slices in a single layer. Cook for about 2-3 minutes on each side, or until golden brown and crispy.
    • Transfer the cooked slices to a paper towel-lined plate to drain any excess oil. Continue frying the remaining slices, adding more oil to the pan if necessary.
  5. Serve:

    • Serve the escalopes of courgettes hot, garnished with lemon wedges and fresh parsley. The lemon juice adds a bright, fresh flavor that complements the crispiness.

Tips:

  • For added flavor, you can mix a little garlic powder or smoked paprika into the breadcrumb mixture.
  • Serve with a side salad, pasta, or rice for a complete meal.

Enjoy your Escalopes de courgettes! This dish is a great way to enjoy the delicate flavor of zucchini with a satisfying crunch.
